Easter Breakfast Pie #Recipe and Spring Garden Party Ideas Rural Mom

We’re getting ready for the best Easter brunch thanks to World Market!  It’s such a privilege being a World Market Ambassador and I’m excited to share what’s new. All thoughts and opinions are solely my own.  

Everywhere you turn right now, the bunnies are, well… multiplying just like rabbits do!  Easter and spring colors, flowers and characters have use reaching for the egg dye, rustling up baskets and planning our family feasts.

An addition we’ve made to our Easter festivities is to add a simple day-after-Easter brunch for our out-of-town guests.  It’s a wonderful way to extend the holiday and making an Easter Breakfast Pie is a great way to use up some left-over ham.

The key to putting together a a quick and easy brunch for the day after a celebration is to keep things super simple.  After preparing a huge Easter meal the day before, slaving away in the kitchen and spending hours on a mid-morning meal is not my idea of fun!  You want to be able to relax, enjoy your company and still offer them a memorable meal.

Focus on color.  Easter and spring are times of rebirth, occasions that offer us bright colors, cheery skies and gorgeous blooms.  Use this as the inspiration to put together a bright table setting with just a few special accents.  When you are using bright colors as a base, a few special pieces of tableware and small accents will do.

World Market always has a wealth of seasonal and classic pieces to enhance your table.  This year, I found a gorgeous set of Garden Plates and Garden Mugs to be the showpiece of my table.  Paired with and an aqua tablecloth, spring quickly arrived on the table!

Use left-over Easter candies and grass from baskets to add a little extra low-key flair.  Lindt Gold Mini Bunnies are an elegant choice, but even a small nest of jelly beans will do.

Select a short prep menu that’s full of flavor.  Easter Breakfast Pie (recipe below) is a crowd-pleaser that makes use of items you already have on hand like eggs, potatoes and left-over ham.  Scones are an excellent compliment and brands like Sticky Fingers Scones which only require a little water to prep the dough.  Instead of making the scones on a baking tray or in a scone pan, bake them with a liner int muffin tins instead for easy clean-up and storage after.

Serve a little cream cheese and fruit, too, and viola! a dazzling Easter brunch is on the table in no time.  Tea, juice and coffee will round out your menu. For a little extra pizzazz, brew up a flavored coffee like World Market Vanilla Bean Coffee.  It’s a pleasant, medium-body blend with a mellow smooth finish that compliments every dish.


Easter Breakfast Pie

Prep Time:

Cook Time:


  • 6 eggs
  • 1 cup milk
  • 1 cup potatoes, peeled and shredded
  • 1 cup baked ham, chopped
  • 1/2 cup Northwoods Tomato and Basil Cheese
  • 1 (9-inch) deep pie crust, uncooked
  • 1/2 tsp salt
  • 1/2 tsp pepper


  • Preheat oven to 375 degrees Fahrenheit.
  • In a large mixing bowl, add eggs and milk. Whisk until fully mixed and frothy. Add potatoes, ham, cheese, salt and pepper. Stir until fully combined.
  • Pour mixture into the pie crust, distributing in an even layer. Transfer pie shell to a baking sheet. (Hint: for super easy clean-up, line the baking sheet with aluminum foil.) Bake for 45 minutes or until center is fully set and crust is lightly browned. Remove from baking rack and allow to cool for 10 minutes. Slice, serve and enjoy!

9 Royal Wedding Party Ideas To Start Planning Right Now

Prince Harry and Meghan Markle’s May 19 wedding is fast approaching — and because it is a Royal Wedding, and therefore a very public wedding, people all over the world will be celebrating it, even if they’ve never actually met the two lovebirds. Are you one of those people? Awesome! That sounds like a blast. Obviously, that also means that you’ll be needing a few Royal Wedding party ideas, so if you’re just starting in on the planning process, here are a few suggestions to get your brainstorming juices flowing.

When Harry’s older brother, William, married Kate Middleton in 2011, fans around the world joined together to mark the occasion. They held viewing parties, they traded memorabilia, and they generally had the time of their lives toasting the happy couple. Harry and Markle’s wedding is likely to see the same kind of celebratory spirit when they meet up at the altar, because, well… for some reason, we’re with royalty. And to be fair,Harry and Meghan both seem like delightful and relatable people, despite their extraordinary lives — so perhaps us non-royal folk can be forgiven our interest in all things royal.

Personally, I’d be more inclined to throw a Royal Wedding party from the comfort of my own home; however, there’s no reason that you can’t adapt any of the ideas below into something you can take to the pub with you, or to a public viewing of the wedding, or wherever else you might be thinking of celebrating. Time to get planning!

Tiaras (Or Hats) For Everyone

I mean, duh. British Royal Wedding brides tend to wear tiaras on the big day (here’s a look at Diana’s and Kate’s via TODAY, for example), so naturally, everyone attending your Royal Wedding celebratory event should also be provided with a tiara. Heck, you could even make tiara-decorating a party activity in and of itself. You get a tiara! And you get a tiara! gets a tiara!

Not into tiaras? Not a problem. Spectacular hats and fascinators also tend to make an appearance at Royal Weddings on the heads of guests, so why not have a fascinator-decorating area set up instead?

Don’t Forget The Décor


As for the rest of your space? You might get some fake or fresh flowers for the place, making sure you include some myrtle in the mix; it’s traditional for royal brides to carry it in their bouquets. Don’t forget to hang a few banners — it’s not a party without them — and if you’re feeling especially silly, have some paper masks of the Royal Family on hand. Goofy? Heck yes. Fun? Also yes.

Turn On The Telly


The Royal Wedding likely be televised, just like William and Kate’s was back in 2011; as such, the obvious thing to do for a Royal Wedding party would be to, y’know, watch the Royal Wedding.

However, the timing may also not be quite right if you’re throwing your party in somewhere other than Europe. Harry and Markle’s wedding won’t be happening quite as early as William and Kate’s did — although Duke and Duchess of Cambridge’s whole shebang kicked off at a perfectly normal time in the UK, their ceremony was at 6 a.m. ET/3 a.m. PT for those of us in the United States — but the younger royals will still be heading to the chapel earlier than what most of us consider an acceptable party time: According to recently released information from Kensington Palace, Harry and Markle’s ceremony will begin at noon in the UK, or at 7 a.m. ET/4 a.m. PT.

The upshot of all of this is that, even if you have a party celebrating the Royal Wedding, you might not actually be watching the Royal Wedding during it. So, if you want to keep something playing in the background— or, heck, if you want to have an all-out marathon — you’ve got two options: , or put on a variety of royalty-themed movies.

Amazon Prime has you covered when it comes to Suits; Seasons 1 through 6 are streaming over there, so if you’ve got a Prime subscription, you’re good to go. And for movies? If you want to go high-brow, The Young Victoria, Mrs. Brown, Elizabeth, Victoria and Abdul, and The Queen are all good picks; or, if you want to go lower-brow (nothing wrong with that), break out some old favorites: The Princess Diaries 1 and 2,The Prince And Me and its many, many sequels, and so on and so forth.

If you have a more experienced troupe of guests who have gymnastic or dance experience, you could select a more challenging class. You might want to learn some aerial hoop or dance trapeze skills, and plan your stage entrance at the MTV awards. Very advanced crews could even experiment with some ropes and silks. SUP Paddleboard Yoga

For something fun and original and you could test your balance at paddleboard yoga.  It’s a great leveller as no previous paddleboard or yoga experience is required but seasoned yogis will still be challenged by the floating mat. Downward dog is a completely different pose when you’re trying not to fall into the water!  The Surfdock in Grand Canal Dock offers SUP yoga with the lovely Alexa from Urban Yoga. Classes are a €25 a head and  two hours long and participants get to enjoy some stand up (or kneeling down) paddling before parking their mat and starting the asana practice. The Surfdock provides the equipment and the wetsuit, as well as the practical considerations such as lockers and showers, so just pack your togs and a towel and you’re ready to go.  SUP yoga is a great way to work up an appetite so you could arrange to refuel in Charlotte Quay restaurant, Osteria Lucia or other GCD eateries.

Hen parties in Galway city can check out Rusheen Paddleboarding. They offer Stand Up Paddleboarding classes and have added Sup Yoga to their summer repertoire. There is also the option to try a SUP safari tour and paddle up to Salthill prom. . While in Galway be sure to try a pizza in the award winning Dough Bros.

And now for something completely different! If you’re looking for an activity which you can almost guarantee none of your hen crew have tried before (unless they’ve been an extra in Game of Thrones!), why not check out axe-throwing in Kilruddery farm market.  The fun and skilful team will teach you throwing techniques to hit a bullseye with a range of axes. Fully supervised and safe, when you’ve got acquainted with your hatchet, you can then test your newfound skills against the squad in a mini tournament. You might discover a hidden talent, and even if your inner lumberjack is lacking, it’s still great fun and curiously satisfying!

The axe throwing venue is located in Kilruddery farm market so you can combine your visit with some nibbles from the vast array of food vendors on offer, with anything from gourmet burgers , falafel or cakes and cookies available. You’ll have to know your audience for this activity as this one is for adrenaline junkies only. But if your bride to be is inclined towards adventure and extreme sports you could book her an action filled day of coasteering. It can depend on the instructor, but no previous experience is usually required however the group must all be competent swimmers. Coasteering combines traversing the coast, rock scrambling and cliff jumping and ocean swimming. You’ll have the benefit of being guided around the rocks and through the water by an experienced teacher and it’s a great way to experience the coastline in a new way and feel like a real explorer. With no shortage of coastline in Ireland, there are plenty of companies that can cater for hen coasteering adventures.

Pinkalicious Party Ideas inspired by the new Pinkalicious & Peterrific PBS Kids Show

We have been waiting months for the premiere of the new PBS Kids show Pinkalicious & Peterrific! It is premiering today, February 19, 2018, and we couldn’t be more excited. We got a fun box in te mail full of stuff, and it inspired us to have some fun! To get ready, we have been having a lot of fun doing things like making pink cupcakes, pink smoothies, painting our nails pink, crafts, activities and more! We wanted to share all of it with you so you can plan your own Pinkalicious & Peterrific Party or have a fun day with your kids watching the new show.

Pinkalicious Party Ideas:

  • Pinkalicious Smoothies – add strawberries, ice, yogurt, juice and a little milk together and blend for a delicious pink smoothie.
  • Unicorn Craft – use a headband and add ribbons and ears (made from felt) then add a horn made from heavy paper. You can also use a ring and make it wall decoration. Tutorial for this coming soon
  • Pinkalicious Wand Craft – Take a wooden star (we got ours at hobby lobby), a wood dowel and some pink ribbon. We painted the dowel pink and cut it into about 18″ each then used hot glue to attach the ribbon and dowel to the star. Easy and REALLY cute! My girls love these.
  • Coloring books, story books, printables, kazoos, maracas, and other fun things add to the fun! Get some pink nail polish and paint your nails pink, then add some pink glitter for fun!

“Kids will simply connect with the great characters Pinkalicious and Peter, and their friends Jasmine, Rafael and Lila; the entertaining and quirky stories; and the visually stunning animation.”

The PINKALICIOUS & PETERRIFIC television series is part of a multiplatform media experience that will also include digital content for kids, parents and teachers, debuting in early 2018.PINKALICIOUS & PETERRIFIC will offer a variety of games at and on the PBS KIDS Games App, as well as clips and full episodes across PBS KIDS’ streaming video platforms, including the PBS KIDS Video App.

PINKALICIOUS & PETERRIFIC app will also launch in 2018. Parent resources will be available on the PBS KIDS for Parents site, and PBS LearningMedia will offer classroom-ready materials for teachers, including video excerpts, games, tips and printable activities.

Each episode of PINKALICIOUS & PETERRIFIC will include two 11-minute stories as well as a live-action interstitial and an original song. The series is currently in production at WGBH and its animation partner, Sixteen South, for 38 half-hour episodes and one hour-long special, which will roll out on PBS KIDS beginning in 2018.
